Quinoa Pizza Base

Makes one 20cm pizza, thin crust.
Ingredients
  • ½ cup quinoa
  • Enough water to cover it in a bowl, and then a little more
  • ½ teaspoon onion powder
  • 1-2 teaspoons italian herbs
  • Pinch paprika
  • Pinch of salt and pepper
Instructions
  1. Put the quinoa in the water and let it rest for at least four hours (preferably more, or even overnight).
  2. Soon the quinoa will have soaked up most of the liquid. If it looks like it has soaked up all the liquid after about 30 minutes, you can always add a teeny bit more, but it isn't a big deal.
  3. After it is done soaking, add the other ingredients and blend it to a batter.
  4. Preheat the oven to about 180 degrees.
  5. Pour the batter into a greased skillet or pizza dish, and put into the oven for about 20 minutes, or until it is cooked through. It should then slide out and you can put it on an oven tray.
  6. Top and put back in the oven like a normal pizza.
Notes
After you've initially baked the base in the oven, you can then put the base in the fridge for later, or even freeze it.

In case you're wondering, I topped my pizza with passata, italian herbs, sliced tomato, sliced kalamata olives, then then when it came out of the oven, rocket (with a teeny drizzle of oil) and cashew cream.

If you're not sure what cashew cream is, you're not living. It is the best! Basically you soak cashews in water for a number of hours, then blend them up with a bit of water. Add some salt and pepper, plus a bit of vinegar and you have a basic cashew cream. More water and vinegar = more like salad dressing or sour cream, less water and vinegar = more like a soft cheese.
