Calcium Cookies {vegan + gluten free}

Ingredients
  • 1 cup medjool dates
  • ½ cup cashews
  • ½ cup almonds
  • ⅓ cup sesame seeds
  • ½ teaspoon cinnamon
  • 2 Tablespoons cacao
Instructions
  1. Soak the medjool dates in boiling water for 5 - 10 minutes before pitting them to soften them, and set aside.
  2. Preheat the oven to 180°C
  3. Combine the dry ingredients and blitz in the food processor until they form a course flour.
  4. Then, add the dates and blitz until the dates have been incorporated and the mix is well combined.
  5. Form into balls and flatten.
  6. Place in the oven for 10 - 15 minutes.
Notes
If these are too sweet for you, or you want another added bit of calcium, substitute some of the dates for some tahini.
