Green Olive Hommus

Hey everyone,

Where does the time go! I can’t believe it is Monday already.

I’ve been reading all these blog posts from others about rainy weather, but here in Perth is has been stinkin hot and sunny. I’ve decided that I am definitely a summer person though for a few reasons:

  • My washing dries on the line quickly
  • I can just eat cool salads for dinner
  • I can go to the beach

Of course, shaving my legs is a downer, but what are you going to do! šŸ™‚

Anyway, for Meatless Monday I wanted to share with you a recipe for Green Olive Hommus. If you’ve been a reader for a little while, you probably know that I eat my fair share of the stuff. I truly think that what makes the difference with hommus (hummus/hommous – however you spell the stuff!) is making it from home, and adding flavours.

Delicious for a summer snack!

Ingredients
  • 1 tin chickpeas
  • 1 and a half lemons
  • 5 tablespoons tahini
  • 3 cloves garlic
  • 14 green olives, plus a few for sprinkles
Instructions
  1. Roast the garlic (or, if you don't have time, dump them in some boiling water for about 5 mins to take the edge off).
  2. Mix it all together.
Notes
This makes about two big batches - use one, and freeze the other
I swear that no matter how much liquid I put in (ok, there probably is a limit), this dries up after a few days (it's the tahini). Just add some water if this happens
