In an effort to include more sea vegetables in my diet, I have started experimenting with dulse flakes and a variety of dishes using nori, and have stumbled across a truly delicious winter lunch choice which I’m calling, Incredible Warm Winter Nori and Avocado Wrap.
Ingredients
- 3 nori sheets
- 1 cup brown rice
- half an avocado
- 4 semi sun-dried tomatoes
- Loving Earth Raw Salad Sprinkle
Method
Chop the avocado and sun-dried tomatoes into a bowl and add a couple of tablepoons of salad sprinkle. Cook the brown rice (because I’ve been at work I’ve been using the dreaded microwave…. which is why I also haven’t included a picture…. too bashful to take a shot at work). Empty the cooked and warm brown rice into the bowl and stir it all together.
Fold and split each nori sheet into four postcard-sized pieces.
Spoon the filling onto the piece of nori and devour!
UPDATE: Loving Earth have discontinued their raw salad sprinkle, but you can whack in some other things that would be similar like pepitas, sunflower seeds, pine nuts and some teeny tiny kale
