Date and Walnut Truffles

I had some friends over for dinner recently, and because the main meal was quite decadant (lets just say it included a lot of butter, I thought I’d go easy on the dessert.

Introducing the date and walnut truffles….

Ingredients

  • Handful dates
  • Handful walnuts
  • About 1/4 cup almond meal
  • About 3 tablespoons agave syrup (or honey)
  • 2 tablespoons cocoa powder
  • 1/4 cup coconut

 

Method

This is super easy. Whiz everything except the coconut together in the food processor. Place in the fridge for about an hour (so it goes a bit harder and easier to mould into balls).

When it comes out, use a teaspoon to scoop out portions and roll them into balls, and then roll around in the coconut.

Delish, and they lasted in the fridge for about a week afterwards.
