I keep seeing these yummy recipes for a chocolate fudge, but they either contain bananas (which I cannot stand… I’m a weirdo, I know), or heaps of coconut oil, which doesn’t take my fancy either.It took me forever to realise that I could just have a whirl at creating one myself, and it won the tick of approval from Rosco, who polished off most of them!
- 10 medjool dates
- 2 tablespoons peanut butter
- 1 cup shredded coconut
- ⅓ cup cacao
- Soak the dates in boiling water for about 10 minutes (this will make them way easier to process). Drain the liquid and add to your food processor, along with the other ingredients.
- Line a baking tin with baking paper and spread out and squish down, and put in the freezer for about 1-2 hours.
